Nestled in the west hills of Paso Robles, at one of the highest elevations in the region, sits Adelaida Vineyards and Winery. Upon first view, the stone veneer on the tasting room reflects its natural environment and exudes a feeling of warmth and comfort to its visitors. The surrounding landscape is no different. The native plant palette lends itself to the natural plant materials found on the surrounding hillsides while creating a variety of textures and offering seasonal profusions of color. From the seating areas, both on the patio and above on the deck, the native-inspired plants give a sense of being fully immersed in nature, while maintaining the tidiness of a well-designed landscape.

Tolosa Winery | San Luis Obispo, CA

Tolosa’s tasting room sits nestled within the vines of Edna Valley. Walking up to the tasting room door, visitors are greeted with playful grasses dancing in the ever-present breeze. Once led to the back patio, there are multiple seating nooks to choose from based on group size. The main area is very open, with flagstone paths leading to different seating options. Umbrellas offer the most shade in these areas, with minimal plantings to accentuate the hardscape. Following the path toward the grove of olive trees, smaller, more intimate spaces come into view. The field-grown olive trees offer more dense shade and privacy to these nooks, with grasses and path lights leading the way through the space. Finally, the area opens back up to showcase an incredible, metal kinetic sculpture that moves gently with the breeze. At the base of the sculpture, brightly-colored sage and kangaroo paw plants complete the dynamic centerpiece.

Behind stacked Adelaide stone walls, a selection of tough seasonal plantings embellish highlight areas. A palette of evergreen trees including Olive and Redwood provide a year-round backdrop.

This incredible boutique tasting room, perched on a hilltop with breath-taking views of Paso Robles, features a permeable-paver patio (for the Oak’s sake!), dry-stack seat walls and a plant palette both low-maintenance and perfectly complementary to this outstanding hidden gem of a winery.

The beauty of Adelaida stone is one of the signatures of Tablas Creek Vineyard. This smooth, undulating sandstone was once a sandy bottom to the ocean floor, and no stone better identifies this unique wine appellation. The stone is used both for form and function in this bright sunny garden. The sustainable roots of this winery are apparent in every aspect: their organic vine production, incredible wines, and the use of stone in the landscape – which was quarried from the vineyards themselves.
